The Lead Cook I is responsible for preparing quality menu selections and providing leadership, direction and quality control for Cook II and Steward. Includes maintaining organization, cleanliness and sanitation of work areas and equipment.

THE BRASS TACKS
Effectively implements and role models Columbia Hospitality Values, and all Inn at Virginia Mason policies, procedures and service standards.
Communicates and coordinates all daily work assignments.
Interacts with all food and beverage personnel and ensures quality, presentation and consistency of all food items prepared.
Adheres to standards for sanitation and safe food handling.
Prepares attractive, consistent presentations of all hot and cold items. Strives for best possible plating and garnishing techniques.
Understands all aspects of daily food production.
Creates and prepares new menu items under direction of Executive Chef.
Reads and interprets recipes. Tastes and retastes cooked food.
Ensures set-up, re-stocks supplies and adheres to the first in, first out protocol.
Maintains knowledge of correct maintenance and use of equipment, as intended, properly and safely.
Responsible for all opening and closing kitchen procedures.
Ability to manage emotions in stressful situations.
Demonstrates best practices for waste reduction and supports green initiatives.
Conducts product inventories, ordering and receiving or products
Ensures safe work environment, reports injuries, unsafe conditions and equipment that needs repairs.
Demonstrates commitment; attends trainings, team meetings, outings and responds proactively to unanticipated changes.
Guarantees all work related certifications are current.
Ability and mentality to clean as you go .
THE NITTY GRITTY
Two to four years related experience in high-volume full service environment.
Working knowledge of menu production and butchering techniques.
Food handling and other permits, licenses or certifications as required.
Knowledge of specialized equipment.
Must possess knife skills, ability to adjust preparations for flavor and accommodate customer's needs in a timely mannager.
